Selvapiana Extra Virgin Olive Oil
An extra virgin olive oil from Fattoria Selvapiana, the Chianti Rufina estate owned by the Giuntini family since 1827 and better known for its Sangiovese. The groves sit at 250 to 300 metres in the Sieve Valley, northeast of Florence, where cool air funnels down from the Apennines, making it one of the coolest olive-growing spots in Tuscany. It is mostly Frantoio, a late-ripening variety picked while still green, with a little Moraiolo and Leccino, all from the estate's organically farmed groves.
The olives are pressed in stainless-steel continuous presses, then the oil is settled in terracotta orci and steel and lightly filtered through cotton. Vivid green and viscous, with fresh aromas of artichoke, cut grass and green tomato, and a ripe, pure palate that ends with a spicy, peppery kick.
