From Domaine du Château Philippe le Hardi, ninety-eight hectares spread across sixty kilometres of Burgundy and converting to organic growing. The estate took its name in 2019 from Philip the Bold, the fourteenth-century Duke of Burgundy whose 1395 ordinance banished Gamay from the region's reds in favour of Pinot Noir.

Pinot Noir vines averaging over twenty-five years, destemmed for a five day cool maceration, then fermented in stainless steel for a fortnight with twice-daily pump-overs and aged twelve months, a tenth in French oak and the rest in tank. Bright ruby, showing red cherry and raspberry with subtle hints of spice and violet, velvety tannins and lively acidity.

Best at 16 to 18°C, with roast chicken, charcuterie or a mushroom tart.
