Tequila Ocho was founded in 2008 by Carlos Camarena and the late Tomas Estes. Camarena is a fifth-generation agave farmer and third-generation tequilero, and Estes was Europe's official Tequila Ambassador. They set out to prove that terroir exists in tequila, taking their lead from fine wine. Ocho is a single-estate tequila, and it was the first to state the harvest year on the label. 

This 2023 release comes from Corralillos, a field about three miles north of Lake Chapala. At 5,100 feet it sits outside the Highlands and is the lowest altitude ever used for Ocho. The land is mainly flat with clay soil, and the agave grew in full sun among cattle pastures and cornfields.

Only Blue Weber agave is used. The piñas are slow-roasted in brick ovens and crushed with a roller mill. The juice is fermented in wooden vats with natural airborne yeast, then double pot-distilled. The second distillation takes place in a small all-copper still modelled on the one Carlos's grandfather used. The spirit rests for one year in ex-American whiskey barrels that have already held several fills of tequila.
