Dale De Groff's Pimento Aromatic Bitters 15cl

Dale DeGroff is one of the most influential figures in the modern cocktail revival - the man widely credited with bringing serious bartending back to America in the 1980s and 90s, first at the Rainbow Room in New York and later through his writing and teaching. These bitters are his tribute to allspice, or pimento, an ingredient that was central to 19th century cocktail making. Made by infusing and distilling allspice berries with a blend of select botanicals and Mediterranean spices  

Chestnut brown and pungent on the nose with notes of clove, liquorice, anise and cinnamon. The taste is bitter and barky with hot black pepper, cinnamon and clove spice, more subtle nutmeg and ginger, and a mouth-drying clove finish. A few dashes add warmth and complexity to whiskey cocktails in particular.
