Noix des Pères Chartreux
A walnut liqueur from the Carthusian monks of Chartreuse, following the old country tradition of macerating green walnuts picked around the feast of Saint-Jean in June, but where farmhouse recipes steep the fruit in wine or eau-de-vie, the monks extract the walnut and add a distillation, which gives this its distinctive character.
Deep and gently bittersweet, it shows green walnut and warm spice over caramel, coffee and dried fruit, with a soft tannic edge that keeps it from cloying.
Made to be enjoyed as an aperitif, in a cocktail, or at the end of a meal. It's lovely lightly chilled and a natural match for chocolate and nutty desserts.
