The most widely used bitters in the world, and the backbone of countless classics. Dr Johann Gottlieb Benjamin Siegert, a German army surgeon, arrived at the recipe in 1824 while stationed at the military hospital in Angostura, Venezuela, blending herbs and spices to settle upset stomachs. Curiously, it is not especially bitter and contains no angostura bark; its deep, spiced, gentian-led character comes from the herbs alone. A dash or two lifts an Old Fashioned, a Manhattan, a Champagne cocktail or a pink gin.
