This distinctive gin uses post-press grape skins, which alongside lees from the wine, are distilled to make the base spirit. This is blended with "Kimmeridgian stone distillate" that imparts the characteristic minerality of northern Burgundy. The botanical profile features juniper, grains of paradise, linden flowers, and acacia honey.
