Produced from Pedro Ximénez grapes sun-dried to a raisin-like state, fermentation is stopped early to preserve the grapes’ natural sugars. The wine then undergoes 12 years of oxidative aging in Jerez de la Frontera, developing its rich character.
Taste guide: rich and raisiny with notes of figs and dates, liquorice, maple syrup and coffee.
How to serve: serve at 10 -12ºC (50 - 54ºF) with rich desserts, cakes and pastries, poured over vanilla ice cream, or with strong blue cheeses.
