Daschbosch Méthode Ancestrale Verdelho, WO Breedekloof
A pét-nat sparkling wine from the Daschbosch Experimental Range in the Breedekloof, made entirely from Verdelho.
In the ancestral method, the wine is bottled before fermentation has finished, so it completes in the bottle and traps its own natural bubbles. Here the grapes are hand-picked and fermented slowly with wild yeasts, then bottled near the end of fermentation. The wine rests four to five months on its lees before disgorging. Winemaker WS Visagie, a keen skydiver, likens making it to jumping without a backup parachute.
Lime, crisp apple, fresh pastry and toasted almond, then a zesty palate of bright citrus with a soft, creamy texture. Great with smoked salmon, oysters and other seafood.
