Bedoba, Saperavi
Bedoba Saperavi is a Georgian red made from the country’s signature Saperavi grape, sourced from vineyards in the renowned Kakheti region. The vines average around 30 years old and are farmed using sustainable, largely organic practices, with grapes harvested by hand to preserve quality.
Winemaking combines modern and traditional Georgian techniques. Most of the wine ferments in temperature-controlled stainless steel, while a small amount is fermented in traditional clay qvevri amphora. The wine is matured in a mix of stainless steel, large wooden vats and older American oak barrels before further bottle ageing.
Deep purple in colour, it has aromas of blackberry, herbs, flowers and black pepper. The palate is juicy and structured with ripe tannins and concentrated dark fruit, making it a bold yet approachable red that pairs well with grilled meats and rich dishes.
