Pelo Del Perro Madrecuishe Mezcal Artesanal

A single-agave mezcal from the Cortés family at their palenque in Oaxaca, made from wild Madrecuishe (A. Karwinskii) that grows in the fields around the distillery. Earthy and herbal, showing pine notes and an unexpectedly sweet aroma, it drinks smoothly for its strength. Made the slow way: piñas roasted in a stone pit fired with encino negro, crushed under an ox-drawn tahona, fermented in the open in pine with wild yeasts, and distilled once in a copper alambique.
