An unaged 100% agave tequila from Calle 23, the brand founded by French microbiologist Sophie Decobecq. The agave comes from the highlands of Los Altos de Jalisco, slow-cooked in autoclaves, fermented with natural and cultured yeasts and double-distilled in stainless stills with copper fittings. Bright and expressive, showing rich agave, tropical fruit and cracked black pepper.
