A cherry liqueur from Combier in Saumur, to a recipe dating from the late seventeenth century, made from guignes, an old Loire variety of sour cherry, macerated whole with their stones for a delicate almond note. Rich but balanced, showing ripe cherry over a subtle tang and an almond undercurrent. Serve well chilled as an aperitif, or in a Kir.
