The name comes from the hillside of the original vineyard, named by Chinese settlers during the region's 1860s gold rush. It is fermented in small open-top fermenters and basket pressed. It then spends 22 months in concrete, a large French oak foudre and seasoned French and American barrels.\u003c\/p\u003e\n\u003cp\u003eBlue and red berries, mulberry and five-spice fruit cake, with a wet-stone, earthy edge.
