The estate took its name in 2019 from Philip the Bold, the fourteenth-century Duke of Burgundy whose 1395 ordinance banished Gamay from the region's reds in favour of Pinot Noir.\u003c\/p\u003e\u003cp\u003ePinot Noir vines averaging over twenty-five years, destemmed for a five day cool maceration, then fermented in stainless steel for a fortnight with twice-daily pump-overs and aged twelve months, a tenth in French oak and the rest in tank.
